Sunday Dawg Treat: NFL Week 3 – Cookie/Brownie Stack
One of the many great things about the NFL is coming around food. Starting today, NFL Week 2, we bring you a Sunday Dawg Treat. The NFL, and college football, is different than the other big sports in that you can be very ritualistic about it. We know that most Cleveland Browns games will be on Sunday at 1PM. Most NFL games will be on at that time. We plan that like clockwork. Times when our teams are on at different times, except Thursday Night games, becomes even more special and fun, but the times are consistent. Sunday at 1, 4 or 8:30 and Monday Night at 8:30.
Many of these recipes will come directly from my amazing baker of a wife (owns a very successful bakery) , some from local Cleveland chefs and maybe one from me. For NFL Week 3 we go with a brownie/cookie stack:
Because everyone has their favorites we are not going to give specific recipes for the cookies and the brownies. For some of you, your favorite recipes involve cookies from a tube (Yum!) and brownies from a box (A little bit of batter is Yum!). For others you have family recipes passed down from generation to generation.
- Get your favorite cookie recipe (or tube), really any will work but chocolate chip, peanut butter, snickerdoodle and the like are best.
- Get your favorite brownie recipe (or box). Again any will do.
- Either get 2 baking dishes that are exactly the same size, or start early enough that you can bake one (cookies bake fastest), clean the dish then bake the other (brownies take longer). Much easier if you have 2 baking dishes the same size. A 9 inch square baking dish is best.
- Put all of the cookie dough into the bottom of the baking dish. Bake it.
- Put all the brownie mix in the bottom of the other baking dish. Bake it.
- While those are baking get the following ingredients together, or buy a can of your favorite frosting:
- 4 ounces of butter, softened
- 4 ounces of cream cheese, softened
- 2 cups powered sugar
- 1 teaspoon vanilla extract
- 1 cup peanut butter, creamy or chunky
- Mix butter, cream cheese and peanut butter together using a mixer, or if you are strong enough use a fork.
- Add in the powder sugar and vanilla with mixer on slow.
- Pour the cream cheese frosting mix on top of the cookie, while still in the baking dish. Smooth to cover the entire cookie.
- Once the brownie has cooled, gently remove it from the baking dish and place it on top of the PB cream cheese frosting. Press down to combine the cookie, frosting and brownie.
- Cut and serve.
